After giving birth, our NEBBIA ambassador, Valerija Slapnik, decided to lose some of the weight she gained during her pregnancy. “I don’t need to have the same body as I had before. I will always be grateful to my body because it gave me Rubi. I just want to feel good and be in good shape for my daughter. To be able to run after her and set a good example for her.” She is getting back in shape by eating homemade meals and choosing her ingredients wisely. Valerija shared her recipe for a healthy potato salad that is satisfying and tasty. This is a potato salad recipe that rules them all.

Ingredients
- 8 potatoes
- 6 eggs
- 3 pieces of celery (cut into slices)
- 4 red onions (cut into slices)
- 6 radishes (cut into slices)
- 400 g of white Skyr or Greek yogurt
- 1 tablespoon of dill
- 1/2 teaspoon of sea salt
- Pinch of black pepper
Instructions
Boil whole potatoes with skin on in a big pot. Once soft, drain them and leave them to cool. Afterward, peel the skin. Next, make hard-boiled eggs. While the eggs are cooking, prepare celery, radish, red onion, and dill. Mix all ingredients in a big bowl with yogurt. Once the potatoes have cooled down pass them through a potato cutter then cut the eggs into bite-sized pieces. Add the eggs and potatoes into the bowl with vegetables. Add salt and pepper to taste. Gently mix until well combined. The potato salad can be served right away, or you can leave it in the fridge overnight to rest.
